This is my attempt at a full Pixar Theory timeline, complete with all Pixar shorts (movie related or otherwise), the Sparkshorts, and the Win or Lose TV show. This is a work in progress.

I just want to point out that, although I mentioned calendars are unreliable, because the one Insurance Guy has aligns with the 1955 Elastigirl date, it's more reliable than the others and can be cross-referenced

I've added a few more movies I can definitively place to the timeline. Though, I do have one burning question: do I include all Pixar content, or just what connects to the movies
 
From doing a bit of research, I found a video of someone explaining all the shorts into the Pixar Theory, though they say the Sparkshorts don't fit in any way. Guess I have to do that myself
 
I've added the shorts I can immediately add to the timeline, though for the detailed timeline Lava is gonna be a pain due to it taking place over millions of years as tectonics shift the shapes of the volcanoes, so I'll have to split it up between movies in less that seconds of its time. I've always been good at maths, though this'll be horrible to calculate. It also pushes when humans should've left Earth to millions of years in the future (or I guess the time spent as barely an island the female volcano was ruined by trash, then when they come back and clean up he comes back up again)
 
After doing research for Elio, I realised Luca most likely takes place in 1969 (they watch the space landing in the credits, and the technological advancements align with this time period), so I guess that definitively places it in the same year as tons of Incredibles content…
 
I've added Luca in at 1968, a year before the moon landing, since we see them watching it happen in drawing form in the end credits. I've put the "Ciao Alberto" short shortly afterwards (pun not intended) and the La Luna short 4 years before it. This is because the father in that appears to be the same person as the father in Luca, and the child in it touches the moon, where in that context it could be considered "scaly", meaning it could be Alberto. It also explains why they accepted sea monsters so quickly, and why the father is awkward throughout the movie, since he sees his lost son in Alberto (not realising it's him)
 
Currently watching Toy Story for dates, and while I cannot get images right now (I'm watching it on Disney+) he appears to have a SNES (or a Pixar variant of it) in the living room, which released in America on August 23, 1991. The N64, the next big Nintendo console, released in America on September 29, 1996, so the movie most likely takes place in the '90s, after August 23 1991
 
Rex says "I thought [Sid] was at Summer Camp", placing the movie in Summer. They also have a November '95 licence plate, placing the movie in summer of '96

I'm sorry, I don't understand your explanation for La Luna, could you elaborate?
 
Finding Nemo falls over a few days. The prologue is in 2001, 3 years before the main events, which are in 2004. Again, I can't get screenshots right now, but the first day Nemo's in the dentist office, a calendar can be seen marking the date as November 8. Later in the movie, the dentist buys an Aquascum, which is copyrighted to 2003. The earliest year that has November falling on a Monday (as the calendar says) is 2004, so this lines up pretty nicely, with the events of the movie taking place around then. However, 2 days later, the calendar still reads November 8. 2 days later, however, the calendar reads November 12, the girl's birthday. This assumes it is an intentional detail, unlike the newspaper dates in The Incredibles
 
I'm sorry, I don't understand your explanation for La Luna, could you elaborate?
Ok, so the father in La Luna looks the same as the father in Luca, only with an arm. They touch the moon, and it's coated with stars ~30cm in diameter. In Luca, Alberto has no father, Emily's father has one arm, and Alberto says he touched the moon, saying it felt "scaly". Furthermore, La Luna and Luca had the same director, so this may have been a deliberate decision
