Maybe the events of Loki end with the multiverse being formed which means it makes sense that What If follows Loki and introduces us to some of these other universes. I might change my opinion when the show finishes, for example if the show ends with Variant Loki arriving in the Sacred Timeline. In that case, I think it's best to count back the days from when he arrived there.
If there's no return to the Sacred Timeline, however, I say stick with a special TVA tab.

I personally have them as “present day” 2023 since what caused them to intervene was due to the events of the 2023 Avengers.
