This confirms that the MCU's Fantastic Four were formed on August 8th, 1961.

Not the first time. I don't agree with the interpretation that the MCU has different days of the week though, because if you do the math, it's almost always correct with just a few errors. I notice this happens a lot in fiction and it's best to ignore it.They got the day of the week wrong though. Whoops.
